Spotlight on Eggplant
Rich in fibre, folate, vitamin B1 (thiamine), Vitamin B6, Vitamin K, potassium and magnesium, Eggplant is versatile and hearty. Also known as aubergine they are fat free with a deep purple skin and creamy-white flesh.
They can be roasted, grilled, baked, fried, stuffed or braised. They are also commonly salted prior to use to help keep the texture and reduce the eggplant’s absorption of oil during cooking.
